James Pot Pie was inspired by someone who quietly made a positive impact every time I saw him – a talented photographer at Channel 12 whose kindness always stood out.
But this recipe also carries another layer of meaning for me.
Around the time I began dreaming up this pot pie, my grandfather, one of the kindest men I’ve ever known, passed away. He and my grandma built the kind of home where a family get together meant comfort food and love.
This pie is cozy, nostalgic, and home – but made with the clean, simple ingredients that I cook with every day for my family.

Ingredients for Gluten-Free Chicken Pot Pie
This healthy chicken pot pie recipe, starts with simple, fresh ingredients you probably already have in your kitchen. 🙂
For the filling, you’ll use shredded chicken, sautéed onion, fresh carrots, and fresh celery for that classic homemade flavor. Garlic adds warmth, while peas bring a little sweetness and color.
Everything comes together with olive oil, chicken broth, and a creamy splash of coconut milk (or almond milk if you prefer). A little gluten-free flour or arrowroot helps create that thick, cozy texture that makes pot pie so comforting.
For seasoning, fresh thyme is my favorite when I have it on hand, plus Italian seasoning, sea salt, and black pepper to bring everything together.
The result is a rich, comforting filling that works perfectly in a small pie or a medium baking dish.

How To Make Gluten-Free Chicken Pot Pie
Step 1 – Make the Homemade Crust
In a medium bowl, mix the gluten-free flour and sea salt.
Now cut in cold butter until the mixture looks crumbly. Using a fork helps blend or do by hand.

Slowly add ice water, one tablespoon at a time, just until the dough comes together.
Form into a ball and chill for 10-15 minutes.

Pull out of fridge and add a pinch of flour on parchment paper and roll the dough flat.
This helps to prevent sticking. It may help to form palm size balls and roll out thin.
You may want to go ahead and make pre-cut circles to prepare for the crust.
It doesn’t have to perfect, which makes this recipe fun!

Step 2 – Cook Chicken and Sauté the Vegetables
First, boil chicken for 7-8 minutes, with 1/2 inch water, at medium heat, with lid on.
(important not to go over time, as it will continue cooking in the oven, and we don’t want it chewy) 🙂
I added a drizzle of olive oil to keep a moist texture.
Remove and let cool for a few minutes, then cut into small pieces or shred by hand.
I put my chicken back in this bowl to soak up more juices, so it didn’t dry out.

Cut your fresh veggies.

This is beautiful thyme and fresh is best!
But could also use what’s available to you.

Heat olive oil in a large skillet.

Add:
• onion
• carrots
• celery
Cook about 5 minutes until softened. Stirring a few times and using a lid helps with this step.
Step 3 – Build Flavor
Add garlic, salt, pepper, and herbs.
Cook about 30 seconds until combined.
Step 4 – Make the Creamy Sauce
Sprinkle in gluten-free flour and stir for 1 minute. This will thicken quickly.
Slowly add:
• chicken broth
• almond or coconut milk
Stir until thick and creamy (about 3-4 minutes).
This is where the cozy pot-pie texture starts to happen!!

Step 5 – Add Chicken + Peas
Stir in chicken and peas.
Remove from heat.
Step 6 – Assemble
Bottom crust:
Place crust into pre-greased, baking dish. Remember, no perfection needed for this. 🙂
Pre-bake at 375°F for about 8 minutes to help prevent sogginess.

Add filling.

Top crust:
Lay crust over filling.
Crimp edges and cut small vents.
Brush with egg wash or almond milk (optional).
Step 7 – Bake
Place the bowls on a parchment-lined baking sheet and bake at 375°F for 30-35 minutes, until golden and bubbly.
Let rest 5-10 minutes before serving.

Equipment
- 4 4 inch oven-safe ramekins or 6 small baking dishes
- 1 Medium mixing bowl
- 1 Rolling Pin for crust
- 1 Large baking sheet to place the ramekins on while baking
- 1 medium pot or skillet
Ingredients
Crust
- 1½ cups gluten-free all-purpose flour blend King Arthur
- ½ tsp sea salt
- 6 Tbsp cold butter or solid coconut oil
- 4-5 tbsp ice water
Filling
- 2 cups cooked shredded chicken
- 1 small onion diced
- 2 large fresh carrots diced
- 2 large fresh celery stalks diced
- 2 garlic cloves minced
- 1 cup frozen peas
- 2 Tbsp olive oil
- 3 Tbsp gluten-free flour or 2 Tbsp arrowroot powder
- 2 cups chicken broth
- ¾ cup coconut milk or unsweetened almond milk
Seasonings
- 1 Tbsp fresh thyme or dried
- 1 tsp Italian seasoning
- 1 tsp sea salt
- ¾ tsp black pepper
Instructions
Make the crust:
- Mix gluten-free flour and sea salt in a bowl. Cut in cold butter until crumbly. Add ice water slowly until dough forms. Chill 10-15 minutes.

- Roll dough on lightly floured parchment paper and cut circles to fit baking dishes.
Cook the chicken:
