Equipment

  • 4 4 inch oven-safe ramekins or 6 small baking dishes
  • 1 Medium mixing bowl
  • 1 Rolling Pin for crust
  • 1 Large baking sheet to place the ramekins on while baking
  • 1 medium pot or skillet

Ingredients
  

Crust

  • cups gluten-free all-purpose flour blend King Arthur
  • ½ tsp sea salt
  • 6 Tbsp cold butter or solid coconut oil
  • 4-5 tbsp ice water

Filling

  • 2 cups cooked shredded chicken
  • 1 small onion diced
  • 2 large fresh carrots diced
  • 2 large fresh celery stalks diced
  • 2 garlic cloves minced
  • 1 cup frozen peas
  • 2 Tbsp olive oil
  • 3 Tbsp gluten-free flour or 2 Tbsp arrowroot powder
  • 2 cups chicken broth
  • ¾ cup coconut milk or unsweetened almond milk

Seasonings

  • 1 Tbsp fresh thyme or dried
  • 1 tsp Italian seasoning
  • 1 tsp sea salt
  • ¾ tsp black pepper

Instructions
 

Make the crust:

  • Mix gluten-free flour and sea salt in a bowl.
    Cut in cold butter until crumbly.
    Add ice water slowly until dough forms.
    Chill 10-15 minutes.

Roll the dough:

  • Roll dough on lightly floured parchment paper and cut circles to fit baking dishes.

Cook the chicken:

  • Boil chicken for about 8 minutes.
    Cool slightly and shred or cut into small pieces.

Cook vegetables:

  • Heat olive oil in a skillet.
    Add onion, carrots, and celery.
    Cook about 5 minutes until soft.

Make the sauce:

  • Add garlic, salt, pepper, and herbs.
    Stir in gluten-free flour.
    Slowly add chicken broth and coconut milk (or almond milk).
    Cook until slightly thick.
  • Add and stir in chicken and peas.
    Remove from heat.

Assemble pot pies:

  • Place crust in baking dishes and pre-bake at 375°F for 8 minutes.
    Add filling and top with crust.
    Cut small vents.

Bake:

  • Bake at 375°F for 30-35 minutes until golden.
    Let rest 5-10 minutes before serving.
