How to Make Turkey Taco Lettuce Wraps
With healthy meals, I try to focus on simple, natural ingredients. Go organic or conventional–whatever fits your budget. Sometimes I find spices that are clean, and on sale and stock up when I can! Don’t forget to read the labels, especially if you have food sensitivities.
Ingredients
• Ground turkey – lean protein and main protein for taco lettuce wraps.
• Avocado or olive oil – I prefer avocado for high heat cooking.
• Cumin, chili powder, smoked paprika, garlic powder, sea salt – to create the taco seasoning.
• Garlic cloves – ohhhh, the smell and taste of garlic!
• Cherry tomatoes – a bright, in season summer veggie.
• Cilantro – a little greenery for the food art. (optional)
• Mango – adds the perfect taste of sweetness with the taco taste and a healthy fruit. (optional)
• Romaine lettuce leaves (for wraps) – low carb and easy to plate!
Optional Toppings:
• Green onions
• Avocado slices
• Fresh lime wedges – I love the taste of a zesty lime with tacos!

Instructions
1. In a large bowl, mix ground turkey with water and about a tsp of oil by hand. This helps tremendously to keep the turkey moist while cooking.
2. Preheat your Blackstone griddle (or any flat-top griddle) on low heat. Drizzle with a little avocado oil or preferred oil.
3. Add the turkey mixture to the griddle and then sprinkle the cumin, chili powder, smoked paprika, garlic powder, sea salt, and minced garlic. This is the taco flavor and your actually making a homemade seasoning which gives you control of using minimally processed ingredients, if you go this route.
4. Stir frequently for 4–5 minutes. If the turkey mixture starts to look dry, add a splash of water on the griddle to keep it juicy.
5. Once the turkey is mostly cooked, stir in chopped cilantro and the optional diced mango for added sweetness. I added a little chopped green onions that I had growing in my kitchen window jar!

Occasionally flip and chop the turkey with a spatula, so all the seasonings mix well!

6. On another section of the griddle, place the halved cherry tomatoes cut side down. Cook for 3–5 minutes until warm.

7. Now spoon the cooked turkey into romaine lettuce leaves. Top with tomatoes and any other toppings you love (avocado, lime, onion).
Quick Tips
• Don’t skip the splash of water – during cooking, it keeps the turkey moist on the griddle.
• Ripe mango – gives a beautiful contrast to the spices, but it’s optional.
• These wraps are great for meal prep — just store the turkey and toppings separately and assemble fresh.
