How to Make Cilantro Lime Coleslaw
Instructions
1. In a large bowl, combine peeled carrots, purple cabbage, green cabbage, chopped cilantro, and green onions.
I used hand peeler to get the thicker carrot texture and a long cutting knife for cutting shredded cabbage slices.
Remove the bulky stems from the cilantro and try to focus on cutting the fresh leaves.

2. In a large bowl, mix together olive oil, lime juice, honey, garlic powder, and black pepper. I laid out parchment paper so I could get a good hand mix of seasoning and lime and added as I went. This was a fun step!
3. Pour dressing over slaw mixture and toss until evenly coated. I chose to add a little sea salt for taste.

4. Chill in the fridge for 30 minutes before serving to allow flavors to blend. I used it right away and it also sets well overnight in the fridge for a even more tasty flavor the next day! Feel free to add more squeezed lime juice for serving at a BBQ party, a cilantro lime coleslaw crunchy topper for healthy turkey tacos, or as a fun summer slaw salad!
I hope you enjoy this fun recipe!
