Summer is in full swing and these pineapple boats, are big show stoppers! These Tropical Turkey Tacos are easy, and uses ground turkey taco mix, placed in a pineapple bowl, made on a Blackstone Griddle.
Recently, I was given a fresh pineapple, and have been on a turkey taco kick, as you may have noticed with, low-carb stuffed bell peppers and these easy lettuce wraps. So naturally, I wanted to put this combo in pineapple halves!
You can make this on any flat top griddle and perfect for summer!

How to make healthy pineapple boats!

Ingredients
These are simple and clean. A healthy way to make homemade taco seasoning. Naturally gluten and dairy-free like my pineapple upside down cake!

Instructions
Preheat your indoor Blackstone griddle to about 400°F. (Or outdoor griddle to low heat)
Mix ground turkey and seasonings in a bowl. I used my hands to get a good blend and added a splash of water and oil, to help retain the moisture. For clean eating, I choose olive or avocado oil, as my go to, for no seed oils.

Then cut pineapple into halves and score out pineapple into chunky pieces.

Now brown the turkey on the griddle, add a splash of water. This helps it stay moist.
Keep mixing and close the lid or use a dome.

Once the turkey is nearly cooked through, add chopped kale over the top with a splash of water. Close the lid briefly to allow it to steam and wilt slightly (about 2 minutes). Check out the tips below, if you want a kale substitute.
Then top with fresh pineapple slices directly on top of the taco mixture. Let them warm slightly while the flavors blend and mix gently. The key is to not let the pineapple overcook so you can enjoy the tropical taste.

Add pineapple halves to cook on the sides for about 2-3 minutes to get light caramelized edges.

Serve the taco griddle mixture hot, with within the golden halved pineapples.

Tips
You can swap kale for spinach or shredded cabbage.
For extra flavor, add a squeeze of lime juice or a drizzle of olive or avocado oil before serving.

Equipment
- 1 Blackstone griddle or flat-top surface
Ingredients
- 1 pound ground turkey
- 2 tsp chili powder, cumin, paprika
- 1/8 tsp garlic powder
- 2 pinches dried oregano
- 1/2 tsp sea salt to taste
- 1 cup kale chopped
- 1 whole fresh pineapple halved
Instructions
- Set your griddle to 400°F and let it preheat. (outdoor griddle low-heat)
- Mix ground turkey, seasoning, splash of water and oil.Cut pineapples into halves, and score pineapple chunks.
- Cook seasoned turkey and mix on griddle for 6-7 minutes, add chopped kale over the top with a splash of water. Close the lid to steam and wilt, for 2 minutes.
- Add fresh pineapple slices directly on top of the taco mixture. Mix and warm slightly while the flavors blend.Place pineapple halves to cook on the side for 2-3 minutes to get light caramelized edges.
- Serve the taco mixture hot, in halved pineapples.
