How to Cook an Omelette on a Griddle
When selecting eggs, I go for the healthier ones. I prefer Eggland’s Best! Also, mushrooms are a great addition!
Ingredients
- Eggs
- Spinach
- Tomatoes
- Green onions
- Mozzarella cheese – I used for dairy-free option, Follow Your Heart Brand and it has a great taste!
- Olive oil– or avocado oil
- Optional – sliced mushrooms

Instructions
Preheat griddle to 325F. (for stovetop skillet-medium heat)
Drizzle oil on heating griddle.
Whisk together eggs in medium size bowl.
Once griddle or skillet has reached temperature, pour eggs in and gently push runny egg edges to middle.
Get the perfectly imperfect omelette results by these simple steps.
Allow poured eggs to cook 2-3 minutes.
Then layer tomatoes, green onions, and spinach. This gives the veggies just enough warmth and texture without losing nutrients.
Cover with lid with additional 4-5 minutes.
Add cheese and carefully fold omelette.
Cooking an omelette on a griddle gives off tasty flavors and I love anything that has quick clean up.
Cook covered for additional 1-2 minutes.
Melting the cheese just enough to get the fresh, cheesy Perfectly Imperfect Omelette taste. Then fold over and cook additional 1-2 minutes.

Tip for cooking
You may chose to cook the tomatoes separately on the e-series griddle or gas griddle for a more heated veggie and layer on top off the omelette.

- 1 whole red vine tomato sliced
- 1/4 cup green onions chopped
- 1-2 tsp chives finely chopped
- olive oil drizzling
