Equipment

  • 1 griddle or skillet

Ingredients
  

  • 6 whole eggs
  • 2 cups spinach remove stems
  • 1 whole red vine tomato sliced
  • 1/4 cup green onions chopped
  • 1-2 tsp chives finely chopped
  • olive oil drizzling

Instructions
 

  • Preheat griddle to 325F. (for stovetop skillet-medium heat)
    Drizzle oil on cooking pan.
    Whisk together eggs in medium size bowl.
    Once griddle or skillet has reached temperature, pour eggs in.
    Allow to cook 2-3 minutes. Layer sliced tomatoes, thinly cut green onions, and spinach.
    Cover with lid with additional 4-5minutes.
  • Add cheese and carefully fold omelette.
    Cook covered for additional 1-2 minutes.
