Preheat griddle to 325F. (for stovetop skillet-medium heat)Drizzle oil on cooking pan. Whisk together eggs in medium size bowl. Once griddle or skillet has reached temperature, pour eggs in.Allow to cook 2-3 minutes. Layer sliced tomatoes, thinly cut green onions, and spinach. Cover with lid with additional 4-5minutes.
Add cheese and carefully fold omelette. Cook covered for additional 1-2 minutes.
