Super simple and quick to make!
This easy griddle recipe uses fresh veggies and dairy-free mozzarella cheese. Optional: personal cheese choice.
The omelette turned out amazing, becoming what I call a perfectly imperfect griddle omelette on a e-series griddle.
How to make Perfectly Imperfect Griddle Omelette
When selecting eggs, I go for the healthier ones. I prefer Eggland’s Best! Also, mushrooms are a great addition!
Preheat griddle to 325F. (for stovetop skillet-medium heat)
Drizzle oil on cooking pan.
Whisk together eggs in medium size bowl.
Once griddle or skillet has reached temperature, pour eggs in. Achieve perfectly imperfect omelette results by following these simple steps.
Allow to cook 2-3 minutes. Then layer tomatoes, green onions, and spinach. Cover with lid with additional 4-5 minutes.
Tip: You may chose to cook the tomatoes separately on the e-series griddle or gas griddle, to achieve a more griddle style.
Add cheese and carefully fold omelette. Cook covered for additional 1-2 minutes.
Melting the cheese just enough to get the fresh, cheesy Perfectly Imperfect Omelette taste.

- 1 whole red vine tomato
- 1/4 cup green onions
- 1-2 tsp chives
