How to Make Chicken Fried Rice on a Blackstone Griddle
- Preheat your Blackstone griddle or indoor griddle to low to medium heat. Drizzle a bit of avocado oil or preferred oil, over the surface. Indoor griddle will need about 5 extra minutes of cooking.
- Cut your chicken breasts into chunks and place them on one side of the griddle. I used kitchen scissors for the quickness. Sprinkle lightly with sea salt for taste. Cook for about 8–10 minutes, flipping the pieces several times to ensure even cooking and a golden skin.
This was my first time cooking on the griddle and I learned how quickly food cooks on the Blackstone!! Which I believe this healthy meal, is a great beginner griddle recipe.

3. On the other side of the griddle, add the fresh broccoli florets and the pouch of cilantro lime rice. Drizzle with a heavy splash of water, then cover with a griddle dome to steam them for 5–7 minutes, until broccoli is tender and rice is heated through. Midway through, mix together so the rice spread out.

4. Remove the dome, stir the fried rice and broccoli, alongside the chicken for remaining 2-3 minutes.

Plate and enjoy with your family or just yourself! Me and my son enjoyed this in the backyard, at his grandmas house!

• Flip chicken often for even cooking.
• Use a griddle dome to steam broccoli and rice easily.
• Want more texture? try adding sliced bell peppers.
• No microwave needed – rice steams beautifully right on the griddle with a little water.

- 10 oz Broccoli Florets chopped
- 1 pouch Lundberg Cilantro Lime Rice
- 1 drizzle Avocado oil or preferred oil
- 1 tsp Sea Salt for taste
