Set your Blackstone gas griddle to low to medium heat. Drizzle oil over the surface.
Cut your chicken breasts and place them on one side of the griddle. Sprinkle lightly with sea salt. Cook for about 8–10 minutes, flipping the pieces several times to ensure even cooking and a golden skin.
On the other side of the griddle, add the fresh broccoli florets and the pouch of cilantro lime rice. Drizzle with a splash of water, then cover with a griddle dome to steam them for 5–7 minutes, until broccoli is tender and rice is heated through.
Remove the dome, stir the rice and broccoli, alongside the chicken, for remaining 2-3 minutes.
