How to make: Roasted Lion’s Mane Mushroom
- Preheat oven to 375 F.
- Break apart Lion’s Mane Mushroom into medium bite size pieces. (cut off any yellow)
Rinse asparagus and cut off whitish end parts.
Wash tomatoes and cut into medium spears.
Wash green onions and cut into small slices.
Note: Lion’s Mane Mushroom has several health benefits.
Examples – Brain health, which may protect against dementia. Anti-inflammatory properties. Boost immune system. May lower the risk of heart disease.

3. Place parchment paper on baking pan. (or aluminum foil) Drizzle moderate amount of regular olive oil to prevent sticking. (or preferred oil)
4. Arrange ingredients in pan.
Drizzle light amount of truffle olive oil across ingredients.
Add a couple pinches of sea salt.

5. Place in oven, middle rack. Bake for 12-14 minutes. (watch for light mushroom browning)
Add 1/2 cup water carefully over the light browned mushrooms and bake additional 10-12 minutes.

- 3-4 whole red vine tomatoes.
- 1 tbsp truffle olive oil.
- 2 stalks green onions.
- 1-2 pinches of flaky sea salt.
