I find Lion’s Mane Mushroom at Whole Foods near me. Look for the least yellow. 😉

Head of Mushroom

This amazing mushroom has a tender texture and a taste that mimics (scallops/lobster). It’s a great alternative to meat with a seafood taste.

Choose as a main dish or a great side addition. I prefer to have as a delicious light lunch.

Some say when eaten, it enhances their mood. I don’t know about you, but anything that beats the blues is good for me!

Instructions:
1. Take the head of mushroom and pull into small bite size pieces.

2. Heat olive oil in skillet to medium heat.

3. Add Lion’s Mane Mushroom and simmer for 10-12 minutes.

4. Add washed chopped cilantro or parsley the last 3-5 minutes.

I prefer cilantro after making this! Chose your own special greens. 🙂

Ingredients
  

  • 1 head lion's mane mushroom
  • 1 tbsp olive oil extra virgin
  • 1 bunch cilantro or parsley the amount that makes you happy
  • 1-2 tsp tumeric

Instructions
 

  • Break mushroom into bite size pieces.
  • Heat olive oil in skillet to medium heat.
  • Add mushroom and turmeric. Simmer for 10-12 minutes.
  • Add cilantro the last 3-5 minutes.
