Ranch Chicken Bell Pepper Wraps

These easy, low-carb chicken ranch wraps are made on the griddle! Using clean, gluten-free ingredients. Dairy-free optional and wrapped in bell peppers for a low-carb twist!

Equipment

  • 1 griddle or large skillet

Ingredients
  

  • 2 large red and yellow peppers halved and deseeded
  • 1 lb thin chicken tenders
  • 1 tbsp ranch seasoning
  • 1 cup white mushrooms sliced
  • 1 medium avocado sliced
  • 2 cups fresh spinach leaves
  • 1 tbsp olive oil, for drizzling

Instructions
 

  • Preheat griddle to 325 F. Drizzle olive oil over the surface.
    (or heat skillet at medium heat)
  • Wash and halve the bell pepper, removing seeds. Place them cut-side down on the griddle or skillet.
  • Coat chicken tenders with ranch seasoning and add them to the griddle.
  • Add the sliced mushrooms to the griddle on the side, with a pinch of water.
  • Cook everything for about 10 minutes, flipping the chicken tenders halfway through.
  • Once cooked, remove all ingredients from the griddle.
    Assemble the wraps by placing fresh spinach and avocado slices on the bell pepper halves. Add chicken tenders and mushrooms on top.
