32 ounces uncured ham no nitrates, minimally processed, sliced 3- pound bag organic red potatoes cubed 3 small purple onions sliced 32 ounces vegetable stock 13.5 ounces organic coconut milk 2 teaspoons organic cinnamon 1 tablespoon organic turmeric 1 tablespoon organic ginger 2.5 ounces fresh thyme sprigs Water to fill crockpot halfway
Add sliced ham, cubed potatoes, sliced onions, and sliced mushrooms to the crockpot.
Pour in vegetable stock and coconut milk.
Add cinnamon, turmeric, and ginger.
Fill the crockpot with water until it reaches about halfway full.
Stir everything gently to evenly mix the ingredients and spices.
Place thyme sprigs on top.
Cook on low for 8–10 hours or high for about 6 hours, until potatoes are tender and the flavors have blended
