Made with short-grain brown rice, fresh cilantro and kale, and lime juice, this one pan dish is a tasty option, and yes, even the kids love it!
How to Make One Pan Cilantro Lime Rice
Find rice equivalent to what I used, to achieve the result you are hoping for with this healthy one pan dish.
Follow instructions per your chosen rice selection. (I ordered this off Amazon)
This recipe called for rinsing rice through a mesh strainer.
Ingredients
• Short-Grain Brown Rice
• Dairy-Free Butter or Olive Oil
• Cilantro
• Kale
• Lime Juice
• Turmeric – takes this recipe up to a new level!
• Sea Salt
• Optional: pumpkin seeds
Instructions:
1. Bring 2 -3 cups of water and butter to boil. Add 1 cup short grain rice. Lower temperature to simmer. Keep covered for 42-45 minutes to create your cilantro lime rice.



2. Finely cut or food process, cilantro and kale while the rice is simmering.
Don’t forget to give the greens a really good rinse.


3. Uncover lid, add one cup of hot water, cilantro, kale, 1 squeezed lime juice, salt, and turmeric.
The lime is what brings out the flavor and takes it up to another level in this one-pan dish.

4. Allow to cook for 2-3 minutes while stirring. Remove from heat, and enjoy your prepared cilantro lime rice on one pan.
Enjoy!!

Tips for One Pan Cilantro Lime Rice
• Short-grain brown rice gives a stickier, more comforting texture. Long-grain or jasmine rice can work but may yield a lighter feel for this recipe.
• Not a fan of cilantro? Try parsley or basil for a different flavor profile in your one pan rice.
• Adding protein? Pair with chickpeas or baked salmon for a tasty meal.
• Kid-trick: Pulse the greens in a food processor so they’re well-blended and less noticeable for picky eaters.

Storage & Reheating
• Store fridge with an airtight container for up to 4 days.
• Reheat in a pan over medium heat with a splash of water, or microwave with a couple ice cubes on top and remove cubes promptly after heating your cilantro lime rice.
