Would make for a great meal prep for the week, by doubling up on chicken and veggies ingredients!
Amazingly natural and clean, dairy-free, gluten-free, minimally processed quick and easy dinner recipe. Making this family and allergy friendly. (Can substitute chicken for Tofu)
How to make: Healthy Natural Chicken Veggies
1. Pre-Heat oven to 375 F.
Choosing thighs I find is more budget friendly with a more tender taste of meat. 🙂
Chicken breasts would work also, but they have a tendency to be a little more dry, if you desire.
2. Take chicken thighs and cut into medium bite size pieces.
Thoroughly wash yellow squash and green beans. Use paper towel to remove dirt from whole mushrooms or quick rinse.
Cut yellow squash into thin slices and remove tips off green beans if using fresh green beans.
Cut mushrooms into thin slices if using whole mushrooms.
Place parchment paper on baking pan and spread olive oil to prevent sticking. (Or aluminum foil)
3. Place all cut chicken thighs, yellow squash, green beans, and mushroom slices on baking pan.
Drizzle olive oil on tops, followed by garlic powder across all ingredients.
Add pinches of sea salt for extra flavor.
Cook for 25-30 minutes. (Internal temperature of chicken to minimum of 165 F)
Let cool for a few minutes. Use a spatula to plate this easy dinner!
