Take chicken thighs and cut into medium bite size pieces. Thoroughly wash yellow squash and green beans. Use paper towel to remove dirt from whole mushrooms or quick rinse. Cut yellow squash into thin slices and remove tips off green beans if using fresh green beans.Cut mushrooms into thin slices if using whole mushrooms.Place parchment paper on baking pan and spread olive oil to prevent sticking. (Or aluminum foil)
Place all cut chicken thighs, yellow squash, green beans, and mushroom slices on baking pan.Drizzle olive oil on tops, followed by garlic powder across all ingredients. Add pinches of sea salt for extra flavor.Cook for 25-30 minutes. (Internal temperature of chicken to minimum of 165 F)
