Ingredients
  

  • 2 large golden potatoes
  • 1/2 cup mozzarella cheese
  • 1 tbsp chives
  • 1/2 pack ranch seasoning
  • 1 tsp flaky sea salt
  • 1 tbsp olive oil

Instructions
 

  • Start by preheating your griddle to 325 F.
  • Wash and thinly slice golden potato skins for crispy edges.
    Toss the slices with ranch seasoning.
  • Drizzle olive oil onto preheated griddle. Arrange the potato slices.
  • Cook the potato skins for 7-8 minutes on each side, carefully flipping for even crispness. (add a pinch of water if sticking)
  • In the last minute of cooking, sprinkle shredded cheese and fresh-cut chives over the potato skins, allowing the cheese to melt.
  • Remove the potato skins from the griddle, plate them, and finish with a sprinkle of flaky sea salt.
