  • 1 Skillet
  • 1 medium/large pot

Ingredients
  

  • 2 pound ground turkey.
  • 1 pack spring roll wraps.
  • 1 pack bella mushrooms.
  • 1 pack white mushrooms.
  • 1-2 cups raw spinach.
  • 1-2 cups baby spinach.

Instructions
 

  • Combine turkey and rice. Add 1/2 cup water. Cover with lid and stir occasionally until light brown turkey.
  • Rinse spinach leaves and cut baby carrots into fours.
  • Uncover and place in carrots. Cook for additional 5-6 minutes.
  • Remove pan and allow to cool before placing on spring roll wraps.
  • Drop each spring roll wrap in lukewarm water for 15 seconds and remove with spatula.
  • Place cooked ingredients on wrap and top with raw spinach. Carefully with wet fingertips, roll up the ingredients.
