Wash sweet potatoes thoroughly to remove excess dirt.
Slice sweet potatoes in thin slices. About 1//4 inch thick.
Place parchment paper on baking pan. Spread thin olive oil across parchment paper.
Place sweet potatoes on pan. Coat each side of sweet potatoes with light olive oil and keep from touching each other.
Place pan in oven. Center rack. Bake for 18-20 minutes. Carefully watch. Remove when light golden brown.When cooled and slightly warm, place on plate, and drizzle light amount of honey.
