Kale is a superstar of loaded nutrition and great for gut health.
This recipe I prepared for extra servings so I could freeze for future meals. 🙂
Feel free to cut ingredients in half, if freezing is not an option. Make it your own! 🙂
Instructions:
1. Thoroughly wash kale leaves and cut into small/medium pieces including stems.
I added beetroot leaves for extra nutrition. (not necessary)

2. Rinse and cut desired amount of cabbage.
3. Rinse and cut cauliflower into small/medium spears.
Wash and peal sweet potatoes. Cut into thin circles.
4. Bring 3/4 pot water to boil, add all ingredients including coconut milk and sea salt.
5. Boil for 10 minutes and place lid to medium simmer for 35-40 minutes.
I served my dish with a topping of pumpkin seeds and I added mustard for a contrasted taste.
Get creative with your additions! This recipe is full of nutrients and minerals thats gonna make you feel good about what your putting into your body! 🙂
Makes a great main dish or side dish. Add protein of your choice or enjoy as a plant-based earthy soup!

- 4-6 bunches of kale.
- 1-2 heads of cabbage.
- 1-2 heads of red cabbage.
- 3-4 sweet potatoes.
- 1-2 cans coconut milk.
- 1 tbsp sea salt.
- 1 bunch beetroot leaves and stems. not necessary but adds extra nutrients
