How to make Healthy Ground Turkey Spring Rolls:
- Combine turkey and rice. Add 1/2 cup water. Cover with lid and stir occasionally until light brown turkey.
2. Rinse spinach leaves and cut baby carrots into fours to use in your spring rolls.
3. Uncover and place in carrots. Cook for additional 5-6 minutes. 4. Remove pan and allow to cool before placing on spring roll wraps.
This leaves the carrots having a light crunch texture and goes well with raw spinach, making your healthy ground turkey spring rolls even better.
5. Drop each spring roll wrap in lukewarm water for 15 seconds and remove with a spatula.
I found placing a spoon of water on a plate, prevented the wrap from rolling up. 🙂
6. Place cooked ingredients on wrap and top with raw spinach. Carefully with wet fingertips, roll up the ingredients. Take the lower edge of wrap and gather ingredients and tuck away. Fold sides and secure with top ledge. Much like folding a burrito, you are making healthy ground turkey spring rolls.
Feel free to use dipping addition such as “soy sauce”. I prefer Liquid Aminos as it is gluten-free and the taste is top notch with turkey!!

- 2 pound ground turkey.
- 1 pack spring roll wraps.
- 1 pack bella mushrooms.
- 1 pack white mushrooms.
- 1-2 cups raw spinach.
- 1-2 cups baby spinach.
Instructions
- Combine turkey and rice. Add 1/2 cup water. Cover with lid and stir occasionally until light brown turkey.
