Find rice equivalent to what I used, to achieve the result you are hoping for! 🙂

Follow instructions per your chosen rice selection. (I ordered this off Amazon)

This recipe called for rinsing rice through mesh strainer.

Instructions:
1. Bring 2 -3 cups of water and butter to boil. Add 1 cup short grain rice. Lower temperature to simmer. Keep covered for 42-45 minutes.

2. Finely cut or food process, cilantro and kale while rice is simmering.
Don’t forget to give the greens a really good rinse.

3. Uncover lid, add one cup of hot water, cilantro, kale, 1 squeezed lime juice, salt and turmeric.
The lime is what brings out the flavor and takes it up to another level.

4. Allow to cook for 2-3 minutes while stirring. Remove from heat, and plate.

Enjoy!!
Pair with your favorite protein dinner or enjoy as a vegan dinner adding pumpkin seeds!

  • 1 cup brown short grain rice or equivalent preference
  • 1 bunch cilantro
  • 1 bunch kale
  • 1 tbsp plant butter or dairy butter
  • 1 whole lime
  • 1-2 tsp turmeric
  • 1-2 tsp sea salt
